Transcript
Jack: You know that my sister’s getting married in September?
Rich: No, I didn’t. Congratulations! Where is the wedding?
Jack: In Dubai.
Rich: Fantastic! A wedding and a holiday. What’s wrong?
Jack: Well I tried to put my suit on. I haven’t worn it in ages.
Rich: Oh dear! A few too many burgers?
Jack: I can’t do the trousers up.
Rich: Ha ha ha
Jack: Don’t laugh
Welcome - How to eat like a Premier League footballer?
Rich: Hello my name’s Rich
Jack: and I’m Jack
Rich: and welcome to this week’s Premier Skills English podcast
Jack: Where we talk about football and help you with your English.
Jack: What’s happening this week, Rich?
Rich: In this week’s podcast, we’re talking about health and diet. We’re going to look at lots of words and phrases connected with health and diet including some tricky phrasal verbs.
Jack: And we’re focusing on what makes a healthy diet.
Rich: Premier League footballers need to have a really healthy diet so they get everything they need for strength, speed and stamina.
Jack: In the lesson below, there are some activities about the food Premier League footballers eat.
Rich: Do you think you eat like a Premier League footballer?
Jack: Hmmm, probably not. In this podcast, we’re going to speak about my diet and how I can eat more healthily and lose some weight so I can get into my suit for my sister’s wedding!
Rich: And we’ll ask you about your diet and talk about what you need to do if you want to eat more like a footballer in the Premier League.
Jack: And we’ve got a new competition.
Rich: Yes, we do. You could win some football kit from your favourite Premier League team. Shirt, shorts, scarf and socks!
Jack: More about the competition later.
Topic Focus
Rich: Great news about your sister, Jack. A wedding in Dubai - that sounds exciting.
Jack: Yes, yes it is, but I need to lose some weight for the wedding. I’m getting fat.
Rich: (encouraging) You might have put on weight - I mean, a few kilos recently but no, I wouldn’t say fat. Maybe you're big boned. OK, maybe a little overweight but you can do something about it. You’ve got a few months to lose a few kilos!
Jack: Thanks. I want to look good in the wedding photos, I need to be able to get into my suit and the wedding will be on the beach. I’ve taken up running joined the gym.
Rich: That’s great. Sport and exercise is always good but I think a balanced diet is the key thing.
Jack: Less cake?
Rich: Yes, less cake!
Jack: Pies?
Rich: Cut down on the pies.
Jack: Beer?
Rich: In moderation... Not too much.
Jack: Hmmmm!
Rich: You’ve got three months until the big day so there is lots you can do. What’s your diet like?
Jack: Well, like any Englishman, I like a good English breakfast... er... fish and chips... I love pizza... some fast food... snacks and beer.
Rich: English breakfast - cut that out not even at weekends - it might have a bit of protein but way too much fat - it’s not healthy. Maybe try some porridge or a banana - go for some fibre - something that will fill you up and stop you snacking later on.
Jack: But I love bacon and eggs - I could go for a run and that would burn a few calories, right?
Rich: Yes, but nowhere near enough. Diet is so much more important to lose weight. A one hour run might burn 400 calories - you’d have to run for 2 hours just to burn off your breakfast. How many hours can you run in a day?
Jack: And I should cut down on fast food?
Rich: Not just cut down - cut it out completely. Burgers chips, pizzas all this stuff is really high in calories. You need to choose something that is low in calories. What about steamed veggies with some brown rice.
Jack: meat?
Rich: Go for chicken or fish instead of red meat.
Jack: I think the biggest problem is my sweet tooth.
Rich: Avoid added sugar - biscuits and cakes and chocolate it’s all processed and really high in calories. Eat carrots - honestly, you can get organic carrots and they are really sweet - peppers are nice, too.
Jack: No biscuits?
Rich: Not never but just fewer - there’s too much added sugar and sugar can make you really fat. sugar’s everywhere - drinks too.
Jack: So, what drink is best?
Rich: Water or tea - fizzy drinks have loads of sugar and are really bad. There’re 140 calories in one can of coca cola, that’s a 20-minute run. I don’t think diet coke is any good either - water is best if you’re thirsty.
Jack: Lots of things to remember. It’s true that I need to make a few changes to my diet. But will these changes get me into my suit?
Rich: Yes, it might even make you look good on the beach if you’re lucky.
Task - Language Focus
Rich: What we’d like you to do now is think about what you normally eat.
Jack: Are you as healthy as a Premier League footballer or do you need to cut down on a few things like me?
Rich: There were a few phrasal verbs in the previous section. One of them was to cut down on. It means to reduce the amount of something. I told Jack earlier that he needs to cut down on the number of pies he eats. He needs to eat fewer pies.
Jack: And you told me to cut out fast food. Cut out is another phrasal verb. It means to stop doing something completely.
Rich: So first, we want you to think of your current diet. Is there anything you need to cut out of your diet? Is there anything you need to cut down on?
Jack: Then, we want you to start thinking of what you should eat more of. Do you eat lots of fresh fruit and vegetables?
Rich: Do you think you have the right amount of vitamins, fibre and protein in your diet? Do you think you have a balanced diet?
Jack: Yes, a balanced diet is when you have the right amount of everything your body needs. If you have a balanced diet you won’t put on weight.
Rich: Another phrasal verb - put on. It means to become heavier, to gain weight.
Jack: Do you think the food you eat is high in calories or low in calories? If you don’t want to put on weight it shouldn’t be too high in calories.
Rich: We want you to think of a healthy dish from your country and tell everybody why it is healthy and good for you.
Jack: It can be breakfast, lunch or dinner. A dish that is healthy, not too much fat or sugar or salt. Something that’s not too high in calories and made with fresh ingredients so it’s got lots of vitamins.
Rich: Write the dish in the comments section with its ingredients and how it’s made.
Jack: We want other people to comment on the dish. Does it sound like it’s healthy? Does it sound tasty? Do you think it would fill you up?
Rich: It would be great to learn some healthy dishes from around the world and get people experimenting with food from different countries. Why don’t you make a start, Jack and write a dish in the comments section?
Jack: Good idea! I will.
Competition
Rich: We said earlier that we have a new competition for you.
Jack: That’s right. You could win some kit from your favourite Premier League team. We’ve got a Premier League shirt, shorts, scarf and socks to give away as a prize. What do you have to do, Rich?
Rich: It’s all about health and diet. Under this podcast, you can see the title competition. We want you to look at the puzzle there. There are a number of questions. If you can answer all the questions correctly you will reveal a word connected to football.
Jack: And all you have to do is complete the form with the correct answer and you have a chance to win this fantastic prize.
Rich: I’ll repeat what you have to do again. First, answer the questions. When you have the answers you will see a mystery football word. Then, write the football word where it says answer. Finally, write your name and contact details and click submit. Easy!
Can you work out this week’s football phrase?
Rich: Have you got a football phrase for us this week?
Jack: Yes, I have, but first, last week’s football phrase. The phrase was ‘training drill’.
Rich: A training drill is a repeated activity that you do again and again so you get better at it. In training, players have shooting drills passing drills and defensive drills. There are lots of different ones.
Jack: We had lots of correct answers. Well done to Liubomyr from Ukraine, Elghoul from Algeria, Mon from Egypt, Shobonenok from Russia, Ahmed Adam from Sudan, Kwesimanifest from Ghana and finally Phhchoung123, anhduongspurs, and anhthaicutecocudai all from Vietnam. You all got the right answer!
Rich: So, what’s this week’s football phrase, Jack?
Jack: This week’s phrase is to **** something **. It’s a phrasal verb that means to start doing something new usually as a hobby - something you do in your free time. It’s not specific to football but it’s a phrase I used earlier when I was talking about trying to get fitter. I said I’ve ***** ** running.
Rich: Great. I think I should **** it **, too. I’d like to lose a few kilos for the summer! Right, that’s all we have time for this week!
Jack: Don’t forget to write your answers to our questions and make a guess at our football phrase in the comments below. And enter our fantastic competition to win some football kit!
Rich: Bye for now and enjoy your football!
Vocabulary
How much did you understand?
In the podcast, Rich and Jack used lots of words about diet that might be new for you. You can see two examples here:
Sport and exercise is always good but I think a balanced diet is the key thing.
It might have a bit of protein but too much fat - it’s not healthy.
There were a few more tricky words in the podcast. Can you remember all of them? Try the activity below, then, listen to the podcast again to hear how we used the words in context. This can really help with understanding.
Activity 1
Learning
Diet and Nutrition
Premier League footballers have to watch what they eat. They have to eat a healthy, balanced diet. In the podcast, Jack spoke about his diet. Jack hasn't been watching what he eats and has put on some weight. Look at the meals below. Do you think this is what a Premier League footballer usually eats or what Jack normally eats?
An English Breakfast (bacon, sausages, fried egg, fried mushrooms, fried bread and baked beans)
Banana and apple smoothie with some porridge.
Beef and potato pie with chips and gravy.
Chicken and steamed rice with brocolli and red peppers.
Pizza and chips with a pint of beer.
Vegetarian chilli with fruit juice and lots of water.
In the activity below, take a look at the advice and decide if you think it is good or bad.
Activity 2
Language
Phrasal Verbs
In this week's podcast, Rich and Jack spoke about diet and nutrition. When they were speaking they used lots of different phrasal which are verbs that consist of more than one word. Phrasal verbs can often be difficult to understand because they often have a non-literal meaning and their meaning is often not obviously related to the meaning of the main verb that it uses. Look at this example from the podcast:
Are you as healthy as a Premier League footballer or do you need to cut down on a few things like me?
Here the phrasal verb is cut down (on) and it means to reduce the amount, number or size of something. It is not immediately obvious what it means and you often have to use the context of the sentence to understand the phrasal verb. Take a look at these examples that were used in the podcast. Can you understand what the phrasal verb means?
You might have put on a few kilos but I wouldn't say that you are fat.
I've taken up running and joined the gym.
Try some porridge or a banana - something that will fill you up.
In this next activity, take a look at the sentences that include different phrasal verbs and try to match each one to the correct meaning.
Activity 3
Task
Plan a Meal
In the podcast, Jack and Rich spoke about diet and nutrition and you've thought about some of the things a Premier League footballer should eat. We want to know more about your diet and the things you normally eat. We would like you to share a healthy dish from your country and tell us all about it. We want to know:
- The name of the meal (the main ingredients) and when people eat it (for breakfast, lunch or dinner).
- How do you cook it? Is the food steamed, fried,
- Why is it healthy? Is it low or high in calories? Is it low in sugar? Does it have a lot of fibre or protein in it?
- Why is it tasty? Why do people like it?
Write your healthy dishes in the comments section at the bottom of the page. We would also like you to comment on other people's dishes. Do they sound tasty? Will you try them?

COMMENT
In my opinion, being on diet or healthy nutrition has to be a life style not just to lose weight. Diet and fitness are also two side of medal and complete each other. So they shouldn't be compared. There is an equality in the nature. The food eaten must be equal the energy exerted. So being on diet program without exercise doesn't benefit. People have no option to eat whatever they wanted. We have a proverb related this topic. Literally "The dates you eat in summer scratch you in winter" Two times meal is enough daily. A powerful breakfast and but a light lunch or supper is suggested.
TASK
Turkish cuisine have plenty of healthy dishes especially a mixture of meat or fish and vegetables. I keep myself away from kebab and pastry that causes getting weight. I go kitchen only to eat not to cook. I’ve no idea how to prepare and cook food-:) I suggest and prefer bean, spinach and okra mixed and cooked with ground meat for lunch or dinner.
Mystery Word-- CHELSEA
PHRASES
I have to cut out long time surfing on internet and also cut down beverages.
I never do calculate amount of vitamin or calory. I don’t consider to put on weight. If there more kilos there must be more exercises as a punishment of it.
P.S.
It’s been said that human eats five times more than what they needed.

Correct me
My diet is usually low in carbohydrates. But because of that I must eat food that based high in protein and fat.I try to eat a lot of healthy fats.I like to eat vegetable, with olive oil.
For breakfast I eat eggs with some vegetable such as peppers.I like to drink green tea. Beside of that I workout four days in the gym.I do only basic exercises such as deadtlift, squat, overhead press, bench press, chin ups...One day in the week I like to do my cardio and that is usually on Friday.

Hi Milos,
Your English is excellent and there are not many things to correct. The main thing that I notice is that you don't put a space after commas and full stops - I know it's just a little thing but it makes everything look a bit better if you do.
A couple of other things to think about:
Hope that helps a little and thanks for your message!

Diet is as much important as fitness. It means you have to give your body enough energy but also you need to burn some calories during the day. People used to do physical work on daily basis and they could allow themself food rich in calories. It's not the case anymore so we have to be careful what we eat. Sugar, salt, flour - we should all cut down on this ingredients.

Hi Aragorn1986
I agree with you and Rich. I spend almost all of my working time behind my computer so it's important for me to go to the gym and do exercise, not only to lose weight, but also to stay fit and healthy. I want my sons to grow up thinking that doing exercise for fitness is normal. When I was growing up, people who went out jogging or who joined gyms were called fitness fanatics and considered strange. However, our diets are so rich these days and our lifestyles so inactive, if you don't do regular exercise, you're going to put on weight.
You are lucky because you can always go mountaineering and be active when you volunteer as a guide.

Thanks, we're really happy that you enjoyed this podcast. I also think it's great that in the comments we can learn so much from around the world. Rigla is a highly nutritious vegetable full of iron and other benefits. To cook it we usually use the Damaa or the basic sudanese stew used for cooking most vegetables. The Rigla is first bunched together and finely chopped. It is then washed well in a colander and left to dry. In cooking this vegetable we usually add lentils to thicken the stew.
If someone wants to cook it, here are the indredients and the way you can cook it in more detail: two bunches of rigla, a half cup of red lentils, three onions, a half kilo of lamb or beef, two table spones of tomato paste, a quarter cup of oil, a half pod of garlic, some salt, coriander powder, and black pepper.
Now, the metod, first- chop and wash the Rigla then soak the lentils in water. After that chop the onions and wash the meat, then put the oil, meat and onions in the pot and (sauté) till the onions are lightly browned. After that add some salt, spices and chopped rigla and lentils. Now add one cup of water, and cover the pot to let it cooked on low heat with stirring every10 mins. when the meat is tender then add tomato paste and leave it to cook further. When the oil comes to top add grated garlic. Finaly- remove from heat after 10 mins.
I'm sure you will be licking your lips as you see your stew is ready to be served!!
Go for it, It's healthy and Tasty, but don't ask me about the amount of calories in it, because me myself I don't now!

That's great Rich.
Oats and wheat porridge are sometimes introduced for variety.
Plus there's roasted corn made into dough and soya beans dough prepared together and known as tom brown ... very nutritious.

In Sudan, dishes are mostly consist of two parts. The first part is one of these : bread, Kisra, Ghurrasa and Asseeda (porridge) then the socond part is called Molah (stew). Some stews like Damaa can go with everything, while others like Malooha just goes with Ghurrasa. In my next comment I'm going to talk about a mouth-watering Sudanese dish called Rigla and exept Asseeda, it goes with Bread, Gurrasa and kisra.

Correct me
My diet is probably healthy, I'm keeping fit despite having no any kind of regular sport, my only sport is walking. I know that I don't have a lot of stamina, maybe I need to take sport more seriously.
Fitness or Diet? That's a tough question, isn't it?
On one hand a balanced diet will provide everything that your body needs to perfectly perform, but on the other hand fitness will make someone's body strong, high stamina....etc.
I can't suggest one as better, but in my opinion, I think they both complete each other.

For breakfast, a healthy meal form Ghana could be maize porridge with a moderate amount of milk and bread laced with raw vegetables.

Hi Kwesimanifest
Porridge is also a popular breakfast choice in the UK. Here it's usually made from oats rather than maize. Some doctors say that oats are good for your heart.

I think i have a healthy diet because i am quiet particular about the things i eat. I don't mind spending time to read the quantity of calories on a can to make a decision whether to eat or not.
I think a diet is more important than fitness because in my opinion a healthy diet leads to one being fit. However attaching fittness exercise to a healthy diet is excellent.

I have been having a healthy diet since my GP ordered it in march. It is more important than fitness so I ended jogging when using cardiovascular drugs.
In Algeria all muslims obey to ramadhan diet these days. No food nor water from 3 am to 8 pm. But in the night lots of sugar and fat so no place to well being.
In restaurant when someone in on diet he usually eat oil fish like grilled sardins with steam vegetables with olive oil. Algiers Chek chouka with grilled vegetables like tomato, aubergins and pigments and a lot of olive oil is very healthy. Whole grain bread is added as we use it with our fingers to grasp on the food.
Processed fooding is not good as well as fried meat or eggs.
The 'foul' dish of Sudan and Egypt is healthy and cheap. Our bean dish is like this. It is very popular also.
In Kabyl rural areas, Couscous with various herbs and some milk is healthy and popular. Having dattes or dryed figs as sweeties is good fo the minerals, vitamins, fibers and oligoelements they carry.

Hi Ahmed,
Your Shak shooka is like the one we prepare in Algiers. Eggs are optional in the recipe. Tomato and green or red pepper are roasted before putting them together with alot of olive oil.
People obey to Ramadhan but not for loosing weight purpose. It is just a faith and praying is over stressed. Long hours every night of Tarawih. The diet is from the very morning when appears the day light until the sun falls down the line. It is just the right time I gave which is the same depending on geographical position.
Our South Shak shooka ( for Sahara towns like Biskra, El oued) is made from home made pasta leaves which have been poored over with meat or chiken salsa.
